Pre heat the oven to 350 degrees. Spray your choice of zero calorie non-stick cooking spray into each muffin pocket in your tray. While you wait, chop up peppers and mushrooms to desired size, add to each muffin picket, along with approximately 2-3 oz of egg whites. Bake for 20 minutes, and enjoy.
