Ingredients for Spinach and Mozzarella Egg Casserole Recipe

  • 1 tablespoon olive oil
  • 4 cups baby spinach
  • cup shredded mozzarella cheese
  • cup shredded Colby jack cheese
  • cup chopped scallions
  • 8 large eggs
  • teaspoon salt
  • teaspoon black pepper

How to Prepare Spinach and Mozzarella Egg Casserole Recipe

  1. Preheat oven to 375°F
  2. Heat olive oil in a medium skillet over medium heat and add spinach. Sauté until wilted. Transfer spinach to a 9” × 9” baking dish
  3. Put remaining ingredients in a medium bowl and whisk until combined. Pour egg mixture on top of spinach
  4. Bake for 30 minutes or until eggs are no longer runny. Serve warm
