Ingredients for Balsamic Roast Beef:

  • 1 tbs coconut oil
  • 3 lbs top round roast
  • 4 tsbs minced garlic
  • 1 tsbs salt
  • 1 tsbs pepper
  • 14 oz beef broth
  • 1 cup red wine
  • 1/4 cup balsamic vinegar
  • 1 cup chopped onion
  • 4 cups kale
  • 3 tbs extra virgin olive oil
  • 3 cups spinach
  • 1 cup watercress
  • 3 tbs red wine vinegar
  • 1 tbs dijon mustard
  • 1 tsp salt
  • 1 tsp pepper

How to Prepare Balsamic Roast Beef:

Heat oil in a skillet over medium-high heat; rub roast with garlic, salt and pepper.  Cook 2 minutes per side or until browned.  Transfer to a slow cooker.  Stir in broth, wine, vinegar and onion.  Cover and cook on low 6 to 8 hours or until tender.

Combine kale, spinach, watercress, oil, vinegar, mustard, salt and pepper in a large bowl.
