Keto- Egg Salad

1/2 dozen hard boiled eggs
Raw eggs
Oil (grapeseen, safflower seed reccomended)
Dijon Mustard
Red or white vinegar
Himalayan salt or sea salt
Your eggs: Hard boil 1/2 dozen eggs. (Double if you want it to last a couple days)
Your Home-Made Mayo(Yields 1 cup mayo) Mix together-
1 raw egg
1 tbsp Dijon Mustard
1 tbsp Red or White Vinegar
1/4 tsp salt of your choice
1 Cup Oil
1 tsp lemon juice (optional)
Typically blended in a ninja blender or other food processor type, after the mayo has mixed well, combine the mayo with the hard boiled eggs.
Blend together until desired thickness
Serve according to body weight goals
