Ingredients for Lentil Soup:

  • 1 tbs of coconut oil
  • 2 cups finely chopped onions
  • 1 1/2 cup of red lentils
  • 3 cups vegetable stock
  • 4 cups water
  • 1 tbs finely grated lemon zest
  • 2 cups chopped fresh spinach
  • salt and pepper to taste
  • 1 cup greek yogurt

How to Prepare Lentil Soup:

Heat a large saucepan over medium heat. Add coconut oil, onion, cumin and coriander.  Cook for 6 minutes or until the onion is well browned.  Add lentils, stock, water and lemon zest; bring to a boil.  Cover and allow to simmer for 15 minutes or until the lentils are soft.  Just before serving, stir in the spinach.  Season with salt and pepper to taste.  Top each serving with a dollop of yogurt.
