LIttle Egg Egg Bake
- 1 Dozen Eggs
- 1/2 Cup Coconut Oil
- 3 Tbs Coconut Oil Butter
- 1 Onion
- 8 Oz Spinach
- 8 Oz Sliced Mushrooms
- 1 Zucchini
- 1 Tbs Minced Garlic
- 1 Bell Pepper
- 16 Oz Pork Sausage
- 12 Oz Smoked Pork
Get all of your ingredients together to help limit your prep time.
Slice the Zucchini and the Peppers thinly.
Slice the onion thinly.
Saute the onions and add the Coconut Oil Butter. Once your onions start to brown add minced garlic
Add 1/4 of the Coconut Oil and add the Mushrooms. Saute the Onions and Mushrooms until your likings.
Once they are finished, add the 8 Oz of Spinach with the additional 1/4 of Coconut Oil and allow the spinach to wilt.
Prepare your 9×13 pan and place place the dozen scrambled eggs.
Add the bowl that included the Mushrooms, Onions, Garlic and Spinach. Once you dumped the bowl into the pan, use a fork and even out the ingredients.
Add the Peppers and Zucchini and distribute evenly in the Pan.
Cook the Pork Sausage and season with your favorite spices. If you have the Smoked Pork you can cut this up in small cubes and place both ingredients into the pan.
Bake the egg bake at 400 degrees for 50 minutes.
