SMOKED PORK EGG BAKE

Ingredients:

1 dozen eggs

16 oz bag of fresh or frozen spinach (If frozen, thaw and drain)

Bell Peppers

Onions

Zucchini

Mushrooms

Smoked Pork (pulled optional) 10 oz (If you don’t eat pork products, sub in another meat!)

Directions:

Chop up veggies and add spinach in a frying pan and saute’ for about 5 minutes at medium heat

Grease a 9 x 12 baking dish and preheat the oven to 350

Whisk the eggs in a bowl while veggies saute’ and then add veggies to the egg bowl

Add smoked pork to mix into egg and veggie mixture

Once the oven is at heat, bake for 30 minutes
