- 1 tablespoon olive oil
- 4 cups baby spinach
- cup shredded mozzarella cheese
- cup shredded Colby jack cheese
- cup chopped scallions
- 8 large eggs
- teaspoon salt
- teaspoon black pepper
How to Prepare Spinach and Mozzarella Egg Casserole Recipe
- Preheat oven to 375°F
- Heat olive oil in a medium skillet over medium heat and add spinach. Sauté until wilted. Transfer spinach to a 9” × 9” baking dish
- Put remaining ingredients in a medium bowl and whisk until combined. Pour egg mixture on top of spinach
- Bake for 30 minutes or until eggs are no longer runny. Serve warm
